Indulge Just a Little...

So much to be THANKFUL for this Holiday Season!
Thankful for Family, Friends, Health, Love, Life.... AND COOKIES?!?
Haha, yes... I LOVE COOKIES, it's a fact! I think if I had the option I would live off them...
Because of this "cookie addiction", I have been on the search for, well... healthIER options!
And being that it is Thanksgiving, I went with Pumpkin!
So I got the fireplace going, made some spiced cider, and baked some cooking last night.

Iced Pumpkin Cookies to be exact.
This recipe was pass along to me by my sister, who loves cookies too...
It is an adaption from the site Eat Yourself Skinny (I like the sound of that)!

Iced Pumpkin Cookies
[ Recipe adapted from Eat Yourself Skinny ]
** Makes about 24 cookies
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup light butter, softened
1 1/2 tsp. Stevia [ or 1 1/2 cups organic sugar ]
1 cup canned pumpkin puree
1 egg
1 tsp. vanilla extract

Preheat oven to 350 degrees F. Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves & salt; set aside.  In a medium bowl, cream together the 1/2 cup of butter and Stevia [ or organic sugar ].  Add pumpkin, egg & vanilla to butter mixture, and beat until creamy.  Mix in dry ingredients.  Drop on cookie sheet by tablespoonfuls; flatten slightly with a fork. Bake for 15 to 20 minutes in the preheated oven.

Mix dry and wet ingredients separately, then combine together.
Batter will look orange and a little fluffy. Scoop tablespoon size of the mixture
on cookie sheet, and bake for about 15 min... Let cool before icing!

Cool cookies, then drizzle glaze with fork.  To make the glaze, combine confectioners’ sugar, milk, melted light butter & vanilla. Add milk as needed to achieve drizzling consistency.  I added some lemon juice to the mix for a little ZEST if you will ...

Glaze
2 cups confectioners’ sugar
3 tablespoon non-fat milk
1 tablespoon melted light butter
1 teaspoon vanilla extract

AND VoilĂ ... Delicious Iced Pumpkin Cookies!
Indulge just a little... because it makes us HAPPY, and remember...
"It is not Happy people who are Thankful, it is Thankful people who are Happy."
